  • Grayish or yellow fat was stored for a long time or incorrectly. The taste will be bitter, with a musty aftertaste.
  • If the lard is reddish with veins, the carcass was not properly processed before butchering. Such fat must be boiled or fried, salting and freezing do not destroy larvae and helminths.
  • Always check the piece of bacon to the touch - quality product dense and elastic. If you press on the piece from the side, a small indentation will appear. Too loose fat tasteless. The skin should not be completely dry or slippery, it is light brown, thin and moist.
  • The knife enters the correct fat with little effort, it slides easily when cutting, the slices are easily separated from the knife. It is advisable to lightly fry a piece of lard when buying - heat the lard over a lighter and smell it, it should not have unpleasant and foreign odors.

  • Freeze raw lard in the freezer. Before serving, cut into thin slices, salt and pepper the chips. Cut new portions gradually - frozen lard is the most delicious.
  • Salted and smoked bacon is also best cut cold, but it remains delicious at room temperature.
  • Salted or raw bacon can be ground with garlic and herbs, add pepper and spread on black bread. On top, you can put pickled or green onions, a piece of cucumber, etc.

Salted cucumbers

A classic of the genre is vodka with crispy pickles, fragrant garlic and currant leaves. Once upon a time, every self-respecting housewife had homemade preparations, but now you can buy selected gherkins in any store.
