How to bake a loaf

To prepare a sliced ​​loaf according to GOST, you first need to make a dough. For the dough, I take 125 ml of warm water, add yeast and 125 g of flour, then mix well.


I cover the dough with a towel and leave it to ferment in a warm place for 1 hour.


After the time has passed, I add the remaining warm water, salt, sugar, melted butter and the rest of the flour.


Now I knead the dough. You need to knead until the dough stops sticking to your hands, becomes soft and holds its shape well.


Next, I leave the dough in a warm place, covering it with cling film or a towel. If the house is cold and there is no warm place, you can heat the oven to a temperature of 40 degrees and put it there. This will take approximately 60 – 90 minutes. The main condition is that it should increase 2 to 3 times.


When the dough has risen, I sprinkle the surface with a little flour, put the dough on it and roll it out with a rolling pin to make an oval.



I put parchment on a baking tray or just sprinkle it with a little flour. I put the loaf on it and make cuts. They can be made either oblique or two longitudinal along the entire length; I chose the second option.


I grease the top with a little milk or kefir, you can also grease it with a beaten egg. Choose the option that you like best. Why are notches needed?

Presumably, the first sliced ​​loaves appeared during the hungry war years, when exhausted people literally fought for a piece of bread. To make it easier to divide the bun equally, they began to make transverse cuts on them.

However, many consider this version to be erroneous and think that this is not why the notches appeared at all. In their opinion, cuts on the loaves simply speed up the baking time and prevent the product from losing its presentation. Allegedly, under the influence of carbon dioxide, the golden brown crust easily cracks.

But experienced bakers do not agree with this option either. Professionals argue that the appearance of bread can only suffer if the technology is violated, and carbon dioxide easily seeps through microscopic pores in the dough, and it does not need cuts as such. The number and direction of notches is simply a sign of a particular product and makes it easier to recognize. So, for example, a city roll has one longitudinal cut, and a sliced ​​loaf has five transverse cuts.

In order to prepare a sliced ​​loaf according to GOST, you will need half a kilo of wheat flour, 5 grams of fresh yeast, 270 grams of water, 8 grams of salt, 20 grams of sugar and 20 grams of butter. You need to dilute the yeast in 150 grams of warm water and add half the flour there. This will be the so-called dough, which should be left to ferment for 3-4 hours. Then all the other ingredients are added to the dough, and the future loaf ferments for another 1.5 hours. After this, the formed bun with cuts is brushed with egg and baked in the oven at a temperature of about 220 degrees for 20-25 minutes.

To prepare the loaf we will need:

  • 2 teaspoons of dry yeast granules;
  • 150 ml milk + 250 ml water;
  • 1.5 tbsp. spoons of sugar;
  • 1.5 teaspoons fine salt;
  • 35 grams 72.5% sweet cream butter;
  • 460 grams of premium wheat flour;
  • 1 yolk + 2 tbsp. spoons of milk (for greasing the loaf).

First, of course, how to knead the dough for loaves. Pour yeast and sugar into a deep bowl. Combine the milk with water and heat it to 38 degrees and pour it into the bowl. Stir until the yeast disperses and the sugar dissolves. We set the bowl aside for 12-15 minutes, during which time a foamy cap will form on the surface of the entire mass. Meanwhile, sift the flour and melt the butter.

Make a well in the flour and pour the yeast mixture into it. Mix lightly and pour in warm, but not hot, oil. Now knead the dough until a dense ball is formed. If the dough sticks too much to your hands, add a little flour. Properly kneaded dough should stick slightly to your palms. Grease a tall bowl with butter/vegetable oil and place a lump of dough in it. Wrap the top of the bowl tightly with cling film and leave in a warm place until the dough doubles in size.

I completed this process in 40 minutes.

Punch down the loaf dough and divide it into four equal parts. We roll each part to the bottom and form a ball. We leave them on a silicone mat greased with oil. Cover loosely with film to protect from chapping.

The balls have grown and now the dough for the sliced ​​loaf is completely ready.

How to form a loaf of dough

Lightly roll out each ball and shape into a loaf. Then we make four oblique cuts on each loaf. Leave them to proof for half an hour. Meanwhile, preheat the oven to 180 degrees.
