Advice. How to choose a pineapple.
First of all, you should pay attention to the appearance and rind of the pineapple.
A ripe pineapple has a fairly soft but elastic rind. An unripe fruit has a harder crust. The rind of a pineapple may be greenish - this is not always an indicator of the immaturity of the fruit.
The pineapple tops should be thick and green (not wilted). Also, in a ripe fruit, the tops rotate slightly around its axis (just don’t overdo it! ;))
A good, ripe fruit exudes a pleasant, unobtrusive aroma. A smell that is too intense may indicate fermentation has begun.
If you managed to purchase a ripe, aromatic fruit, do not store it in the refrigerator under any circumstances - the pineapple will lose its wonderful aroma!
I wish you a successful purchase, pleasant cooking and a wonderful mood! :)))

Rinse the pineapple, shake off the water and dry with a towel.
Cut lengthwise into 2 halves.

Using a knife, carefully trim the flesh inside the pineapple, leaving the walls ~8-10 mm thick.

Carefully remove the pulp from the pineapple.

Cut out the stalk.

Cut the pineapple into small pieces.

Rinse the shrimp with water and dry them on a paper towel.
Heat a little olive oil in a frying pan and fry the shrimp for ~1-2 minutes. Add salt.

Remove the shrimp from the pan (large shrimp can be cut into 2-3 pieces, and small ones can be left whole).

Tip 1. Shrimp do not need to be cooked for long. If the shrimp are raw, they are fried until the meat turns pink and is no longer transparent. This will take approximately 1-2 minutes while frying over high heat.
Boiled-frozen shrimp must first be thawed, rinsed with water and drained. You need to fry them for ~1 minute - that is, don’t even fry them, just warm them well.

Tip 2. If desired, the shrimp for this appetizer can be boiled rather than fried.

Prepare refueling.
Pour lemon juice, orange juice (freshly squeezed), liquid honey (or a little sugar), a pinch of salt, freshly ground pepper and olive oil into a bowl.
Mix the dressing well until smooth.

Today on our menu is an exotic and very tasty dish of Thai cuisine, which you can easily try to cook at home. This is delicious Thai fried rice with vegetables, shrimp and pineapple. The dish is served in pineapple halves; it looks very beautiful on a festive table or as a main course at a romantic dinner.

In Thai cuisine, rice occupies a key place and is considered the main food. Fried rice is very common, which in Thai is called khao pad kung(from Thai khao - rice, pad - fried, kung - shrimp). Khao pad comes with different additives - chicken, shrimp, pork or seafood. To prepare Thai-style fried rice, it is best to use a wok - this is a frying utensil like a frying pan, with a rounded bottom. The ideal combination for cooking Asian dishes is a wok + gas stove.

Thai Fried Rice Recipe

The proportion of products is as follows (for 2 servings):

  • 100-150 grams of dry rice;
  • 6-8 large shrimp;
  • half a small onion;
  • 1-2 tomatoes;
  • 1 ripe pineapple;
  • fish sauce 3 tbsp;
  • 1 small lime;
  • a few stalks of kale;
  • chili sauce or chili pepper to taste;
  • 2 eggs;
  • a pinch of roasted peanuts;
  • vegetable oil for frying;
  • cilantro and green onions for serving.

Fish sauce replaces salt in Thai cuisine, so if you add fish sauce, you do not need to add additional salt to the dish. If you don’t have fish sauce, then replace it with salt, the taste will certainly lose, but this is not critical.

First stage of preparation

First we need to boil the rice until done. In Thailand, a rice cooker is used for this purpose - a brilliant invention. In it, rice will never burn or boil, will not stick together and will not become porridge. In general, you need to cook fluffy rice.

You can use a slow cooker. Rice cooked in it also turns out quite crumbly. I also tried it, it’s not difficult and the result is good.

The proportion of rice and water is approximately this: For 1 cup of dry rice take 2 cups of water. At the end of cooking, you can add a little salt to the rice.

Second stage of preparation

Now you need to prepare all the necessary products. Wash the shrimp, separate the shells and heads, leaving the tails. Cut the back and remove the intestine. Rinse and dry the shrimp again with a paper towel. Chop the onion coarsely. Wash the pineapple and cut into 2 equal parts. Carefully cut a hole in each pineapple half. This is where we will serve the prepared khao pad.

Cut the remaining pineapple pulp into cubes. Chop the tomatoes coarsely. Chop the roasted peanuts into crumbs with a knife. Chop the kale stems coarsely. That's it, the preparatory manipulations are completed, let's start assembling the dish.

Third stage of preparation

Heat vegetable oil in a frying pan or wok (high heat). Throw chopped onions and tomatoes into the heated oil, stirring constantly with a spatula, fry for 1-2 minutes. Break a couple of raw chicken eggs into the wok and stir them with a spatula along with the vegetables. Add the shrimp and fry everything together for 2 minutes, stirring.

Add boiled rice, fish sauce and chili. Don't forget to stir the dish (the temperature is high, stir so it doesn't burn). Add chopped peanuts, mix again and turn off the heat. Add diced fresh pineapple to fried rice and squeeze out lime juice, stir and taste. If there is not enough salt, add more fish sauce and chili to taste.

Serve fried rice with shrimp in pineapple halves. Serve warm with fresh herbs. This is one of my favorite Thai dishes. Look for the name in the menu of Thai cafes Pineapple fried rice with shrimp or Khao Pad Kung. Bon appetit!

When we were visiting Bangkok in early November, I shot a video of a Thai woman masterfully preparing khao pad. Let's look:
