You will need: - 1 kg of dried apricots; - 8 tbsp. flour; - 1 tbsp. water; - 1 tbsp. kefir; - 30 g yeast; - 200 g sugar; - salt; - 2 tbsp. l. vegetable oil.

First you need to prepare the yeast dough. To do this, pour 1 glass of warm water and 1 glass of kefir into a deep container, stir and dilute the yeast, add vegetable oil, 1 tbsp. l. sugar, 1 tsp. salt. Add flour and knead the dough. Lubricate its surface with vegetable oil, cover the container with a towel and place it in a warm place to proof.

While the dough is rising, wash the dried apricots and boil until soft. Cool and pass through a meat grinder. Mix the resulting mass with sugar. Take about 150 g, but focus on the acidity of the dried apricots.

When the dough has risen, punch it down, knead it a little and put it back in a warm place for 10-15 minutes. Sprinkle the table or cutting board with flour, place the dough, roll it out with a rolling pin into a layer 0.5–0.7 cm thick. Transfer the layer to a baking sheet greased with vegetable oil. Puff pastry pie with dried apricots and we especially love raisins for their sweet and sour taste, the special aroma of southern fruits and cinnamon. This time I also used, as I often do, a frozen preparation.

Dried apricot pie with puff pastry

We will need:

  • Yeast puff pastry - 500 g
  • Dried apricots - 100 g
  • Raisins - 50 g
  • Cinnamon - 1/2 teaspoon
  • Walnuts (optional)
  • Egg for brushing dough
  • Oil for lubricating paper

Preparation:

I soak the dried apricots for the filling together with raisins for two or three hours in advance (you can also overnight). For this I take water at room temperature or lukewarm. There is enough of it to just cover the dried fruit. Then I heat the mixture without bringing it to a boil. I leave it to cool. Sometimes I cut chilled dried apricots into pieces. As a rule, I don't use sugar. I add finely chopped walnuts.

Lightly sprinkle the defrosted dough with flour and roll it out into a thin layer, dividing it into two parts. On a special form I place baking paper, greased with oil, and a layer of dough. I prick with a fork, make sides, sprinkle the dough with cinnamon and spread the filling. I cover it with a second layer of dough and pinch the edges. I grease with egg, prick the top layer of dough with a fork and bake, in this case in an air fryer, at 235 degrees on the middle rack at high speed for 25-30 minutes (I put it in an already preheated air fryer). So that the pie is properly baked and the top crust does not burn, as soon as it browns, I cover it with foil.

  3. Place the buns on a greased baking sheet and let them rise for 15-20 minutes. As soon as they rise, brush with beaten egg and place in the oven for 10-15 minutes at a temperature of about 250 degrees (take into account the oven parameters and the size of the buns). Bon appetit!

  1. First, melt the butter and heat the milk. In a deep bowl, mix flour, yeast and 160 grams of sugar. Add our milk to this bowl, and then pour in 2 eggs, which should first be beaten with a fork. After this, we begin to knead the dough - during the process we add melted butter in small portions. Once the dough is ready, put it in a warm place for one and a half to two hours, covered with a towel.
  2. In the meantime, you can start filling. To do this, take the cottage cheese and pass it through a meat grinder or grind it in a mixer - at the end we need a homogeneous, smooth mass. Next, add the egg and the rest of the sugar, then beat thoroughly. We take dried apricots, wash them, remove husks and debris, and then cut them into smaller pieces.
  3. When the dough has risen, divide it into two parts and roll both into two rectangles. Spread an equal amount of curd mixture on top of each and sprinkle evenly with dried apricots. Next, each layer should be folded in half to form a roll. We cut each into equal pieces (this is the size of the buns). Each rectangular piece (bun) should be twisted in the middle.
  4. Next, place our buns on a baking sheet lined with parchment and leave them to rise. Meanwhile, preheat the oven to 180 degrees and, as the buns rise, send them to bake for 20-30 minutes.

  1. Warm the milk a little more than room temperature and add a tablespoon of sugar into it, followed by crumbled yeast. Mix everything until dissolved.
  2. Next, sift a little more than a third of the flour into the mixture. Then mix it all with a spoon until the whole mass becomes homogeneous - this is how we get a dough. We take the dough and put it in the oven for about 35 minutes, preheated to 40-45 degrees. During this time, it will acquire a sour smell of fermented yeast and bubbles will appear on the surface, plus, it will increase 2-3 times, so take a larger container.
  3. Next, stir the dough until smooth without bubbles and add salt, the rest of the sugar and butter (no need to heat it, it will melt on its own in a warm dough), stir everything. Next, sift the flour (but not all of it, leave about 80-100 grams). Knead the dough - add the rest of the flour during the process. When kneading, you can grease your hands with oil to prevent the dough from sticking. Next, put the dough in the oven at 40-45 degrees for about an hour, during which time it will rise by about 2-3 times.
  4. Meanwhile, take the ingredients for the filling - dried apricots and prunes. We wash them, remove the husks, tails and pits from the prunes. We cut our filling smaller and leave until the dough is ready.
  5. Once an hour has passed, take out the dough and divide it into 15-20 balls the size of an apple. We roll them well and cover them with film for about 10 minutes. Then we take and press each ball, and put our mixed filling in the center, after which we pinch the edges right above the filling. Turning the buns seam side down, press them down and make cuts in a circle (any pattern), and then brush with beaten egg and sprinkle with sesame seeds - a pinch per bun.
  6. Transfer the buns to a baking sheet and place in the oven for 20 minutes at 200 degrees.

  1. First defrost the dough. While it reaches room temperature, prepare the filling. We wash the dried apricots with raisins, clean them from all kinds of husks and debris. After this, cut the dried apricots into smaller pieces, pour boiling water over them along with raisins and sprinkle with sugar, leave to infuse.
  2. Let's take the dough. There are two ways to make rose buns:
    1. For the first method, we just need to roll out our dough into a layer, sprinkle it with sugar (if you want sweeter buns) and spread the filling evenly on it. After this, we roll the layer into a roll and cut it into thick pucks - the buns are molded.
    2.
