I love to cook all kinds of casseroles. Besides the fact that they are much healthier than any dish cooked in a pan, they are also very beautiful.

Agree, all casseroles always get very elegant golden brown crusts, regardless of whether they are sweet, vegetable or meat. To do this, just grease their surface with an egg, sour cream or mayonnaise. And if you sprinkle grated cheese on top, it will be even tastier.

Unfortunately, I just can’t accustom children to it, so one day I went for a little trick. I cooked just such a pasta casserole with liver, they asked what it smelled so delicious. I, I confess, deceived, said that the casserole with meat.

The children took her on both cheeks, they did not smell the dirty trick. Then I tried it myself, already, as it were, from their position. Of course, it doesn’t look like meat at all, but all the same, cheese with garlic and mayonnaise confused them a lot, they didn’t recognize the liver, but I’m just glad. Now I will slowly accustom them to the liver, after all, for good nutrition it is simply necessary.

Cooking such a pasta casserole is incredibly simple, each of you can easily cope with it.

To make this pasta casserole recipe, you will need:

  • 300 grams beef liver
  • 200 ml milk
  • 300 g pasta
  • 2-3 bulbs
  • 200 grams of cheese
  • 2 eggs
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 2 garlic cloves
  • salt, black ground pepper taste
  • vegetable oil for greasing dishes

First, let's deal with the liver itself. I settled on beef today. Of course, it is not as dietary as chicken, but it is much richer in taste. First of all, I will rinse it properly under running water:

Put the prepared liver pieces in a bowl and pour milk so that it covers them almost completely. Now let them take a milk bath for forty minutes.

The liver, of course, must be able to choose. An old one will come across - no milk will help. But if someone at least once attacked such a one, then he will not be mistaken in his choice. My piece today is clean, fresh, it is a pleasure to work with it.

While the liver is soaking, cut onion large semirings:

In parallel with this, boil the pasta in salted water.

In general, I try to slightly undercook them, because then they languish in the oven for another twenty minutes. Although I only buy the best durum wheat pasta, they are very hard to digest so they never let me down.

Now I will do the filling for our casserole. The whole process will take no more than five minutes.

Just grate cheese on a coarse grater, mix it with mayonnaise and sour cream, add two raw eggs, mix everything. For taste and sharpness, I squeeze a couple of cloves of garlic into the resulting mixture, mix everything again, and now our future ruddy crust for the casserole is ready:

After soaking, I will put the pieces of the liver in a colander to glass the excess milk:

You can fry. I do this in a well-heated pan with vegetable oil. As soon as one side is browned, salt, pepper, turn over, fry on the other side. Approximately five to seven minutes on each side:

In principle, the liver is already ready for use. With this principle of frying, it always turns out very tender and juicy. But, if you overexpose it even a little in the pan, it will become much tougher, then it will take much longer to stew it and the structure of the liver will become completely different, and this is definitely not my option.

It remains to combine the liver with onions:

Mix everything, and you can start creating the casserole itself.

For this in heat-resistant dishes, greased with vegetable oil, I will lay the pasta in the first layer:

Without any additives, it is more suitable for pies. Let's start with a liver casserole with rice. For her, 400 grams of valuable offal are ground in a meat grinder with a large onion. Rice is cooked at the same time, about half a glass. Porridge is mixed with minced meat, an egg is driven into it, spices and salt are poured in, after which the mass is kneaded. The form is smeared with softened butter, the resulting “dough” is poured into it, and the liver casserole with rice is placed in the oven for about forty minutes. Periodically check readiness: the cooking time depends on the diameter of your form. A low casserole can cook faster.

Mushroom casserole

Mushrooms are a good companion for the liver. A liver casserole with mushrooms is prepared in a slightly different way: a pound of champignons is cut along with a large onion; roasting is made from them. 400 grams of liver (preferably beef) are cut into cubes and also browned. The liver is placed down in the form, roasted on top, the contents are poured with a glass of sour cream, crushed with cheese - and in the oven for forty minutes. Already in finished form, you can sprinkle a work of culinary art taken out of the mold with greenery.

Potato casserole

An even more attractive and satisfying dish - even after a hard day's work, a tired man will eat up “from the belly”. Frying is done from two chopped onions; after obtaining a golden color, about half a kilogram of chopped offal is added, after five minutes of stirring - two tomatoes in cubes (remove the skin). Another ten minutes of stewing - and salt and pepper and a spoonful of tomato paste are added. Four large potatoes are mashed with a piece of butter and half a glass of cream. Half of the puree is first placed and leveled in the form, the liver component is placed on top - and closed with the second half of the potato. In order for the potato casserole from the liver in the oven to acquire an appetizing tan, its top is smeared with yolk. After ten minutes of baking, the dish can be carried to the table by hungry family members.

Unusual casserole

Such a simple dish is quite suitable for welcoming guests. You could say it's a holiday treat. Chicken liver in the amount of 400 g is soaked for half an hour in a glass of milk, after which the excess is peeled off, and it is cut and seasoned. Two carrots are rubbed coarsely, three onions and the same number of tomatoes are cut into circles, ten grams of champignons are cut into small slices. A glass of sour cream is salted (you can also pepper), mixed with chopped dill and whipped a little. The form is covered with foil and a liver casserole is formed: first the offal itself, then half the onion (pour sour cream dressing), on top - champignons - again onions (spread with mayonnaise) - carrots - mayonnaise again. The form is put into the oven for half an hour, then its contents are sprinkled with cheese - and back, now for 10 minutes.

Liver-zucchini recipe

In the season of abundant vegetables, liver casserole can be prepared with many garden gifts. For example: zucchini and carrots are rubbed (the ratio depends on the attitude of the hostess towards these vegetables), raw liver and onions are twisted with a meat grinder, all this is mixed with the addition of all kinds of seasonings and two yolks. After kneading, whites are also introduced - whipped and carefully. The mass is loaded into the mold and baked for 30 minutes at medium oven heat. Because of the proteins, such a liver casserole is very airy and tender. Those who wish can sprinkle it with cheese for ten minutes before turning off the oven.

Buckwheat with liver

First, the frying is done - as you usually do it. When it acquires the desired color, pieces of liver (half a kilogram) are added to the pan and brought almost to readiness. After cooling, everything that was in the pan goes through a blender or processor to make a kind of paste. A glass of buckwheat is boiled and mixed with two beaten eggs and a 100-gram piece of butter (melt, but do not overheat). Mix the porridge with a spoon so that the fillers are evenly distributed. Delicious potato casserole with liver - it's easy! The casserole has a rather expressive taste, despite the fact that half of it is mashed potatoes, enriched, for greater tenderness, with an egg. BUT hard cheese, in turn, form a crisp on the surface of the casserole.

This casserole is another delicious way to use the liver. I used beef, but both chicken and pork are great here.
