1. Pour salt and sugar into a bowl with eggs. Beat everything well with a regular whisk.

1. Immediately pour baking soda into the flour and mix. The flour should be sifted first.

3. Next, pour in kefir. Mix.
4. Add flour and soda in several additions. Stir until the lumps disappear. The amount of flour depends on how large or small you take the eggs. The dough turns out similar to pancake dough.

5. Gradually, in several stages, add boiling water, stirring constantly.
6. At the very end, add vegetable oil. And mix again.


7. The result is a liquid dough.

The thickness of the pancakes depends on the thickness. If the dough is thick, then it does not have time to spread over the pan, and due to this the pancake turns out thick. If your dough is thick, you can add a little more boiling water to get the required consistency.

8. Add a few drops of vegetable oil to a heated frying pan. Fold a napkin or paper towel several times and grease the bottom of the pan. It is advisable to use a non-stick frying pan. The heating temperature should be above average. We measure out the same amount of dough all the time.

2. Add kefir and beat everything well again. We leave this mass aside for now.

3. Pour boiling water into another plate, add soda to it and mix everything well. Without ceasing to stir, pour the soda and water into the whipped mass. And again mix everything vigorously with a whisk.


4. Add refined sunflower oil and add flour in portions. We need to knead the dough like for pancakes. It should be liquid, but very slightly thick. You may need a little less flour, or a little more. Sift the flour through a sieve in advance.


5. The pancake dough is ready. The consistency should be homogeneous, without lumps and not very liquid.


6. Now the most interesting part - we will fry pancakes. For this it is better to take a special frying pan. At the very beginning, you need to lightly lubricate it with refined vegetable oil. Subsequently, when frying pancakes, you no longer need to grease it, since we added oil to the dough.

  • 0.5 liters of kefir,
  • 1 tbsp. milk,
  • 1.5 tbsp. flour,
  • 2 medium eggs
  • 3 tbsp. vegetable oil,
  • 2 tbsp. Sahara,
  • 0.5 tsp salt,
  • 1 tsp soda (without a splash).

1. The first thing we need to do is heat the kefir over low heat. To prevent it from curdling, stir it with a spoon. Next, take a bowl, pour kefir into it, add sugar, salt and soda.


2. Mix with a spoon. The mass will immediately begin to foam and increase in volume.
Beat in 2 eggs. To beat, use a mixer or whisk. Add 1.5 cups of sifted flour. We get a thick, fluffy mass.


3. Now we need to heat the milk and pour it into our pancake dough. Mix.


4. Add 3 tbsp. vegetable oil. Now let's look at the consistency of our dough. If it turns out watery, then you need to add a few tablespoons of flour. If the dough turns out thick, then add warmed milk. The dough should be left at room temperature for 20-30 minutes. And then fry pancakes.


If there are lumps in the dough, you can break them up with a mixer or leave them for half an hour, and then mix it again with a whisk or spoon, and the lumps will disperse. The consistency should resemble liquid sour cream.

5. Heat the frying pan, having previously greased it with vegetable oil.


6. Take half a ladle of dough and pour it into the frying pan.


7. When the edges of the pancake are browned, you can turn it over.

  • flour – 300 g,
  • salt – 1 tsp,
  • sugar – 1-2 tbsp.,
  • soda – 0.5 tsp.

1. Pour milk into a small saucepan and place on low heat. Make sure it doesn't boil over.


2. Meanwhile, pour kefir into another container. It must be heated, but under no circumstances bring it to a boil.


3. And while the saucepan is heating up, pour soda into the warm kefir and mix thoroughly so that it foams and the soda is extinguished. Add sugar and salt.


4. Warm kefir, about 70 degrees, remove from heat, mix well again and gradually add flour in parts.


5. To make pancakes without lumps, you must first make a thick dough, like for pancakes, that is, mix kefir with flour, and then dilute it with milk.

6. Meanwhile, the milk became hot. It is advisable not to bring it to a boil so that foam does not form. Now pour the milk into the dough in a small stream, constantly stirring with a whisk. This makes choux pastry for pancakes.

If the dough is too runny, do not add flour to the bowl immediately. First you need to cast part of the dough, pour flour into it, stir thoroughly so that there are no lumps and combine with the remaining dough.

7. Finally, add 2 tbsp. vegetable oil and mix thoroughly again.

Be sure to add oil. Then the pancakes will not stick to the pan, and much less oil will be needed during baking.

3. The last stage is to add boiling water and knead our dough until smooth. Now you need to add 0.5 tsp here. soda and 3 tbsp. sunflower oil. Stir well again. Our dough for thin pancakes is ready. Let the dough sit for a bit - 10-15 minutes.

4. Now let's start baking pancakes. Place the frying pan on the fire, add a little sunflower oil and distribute it over the bottom. Oil is necessary for frying the first pancake. As far back as I can remember, I have always loved pancakes. But in our family we baked only thin, almost lacy pancakes. And so, when I first tried fluffy thick pancakes, a recipe made with kefir, I thought that these were not really pancakes, but rather a different dish, and that it was very difficult to cook.
